With a simple and sophisticated approach to food, Chef Tony Gullace opened Max of Eastman Place in Rochester New York’s cultural district in 2002. Based on his success, Tony was eager to offer an intimate steak house concept that would champion his style. Max Chophouse is the regions finest. Again, focusing on simple, quality ingredients and impeccable service.
Tony Gullace is one of the area’s leading culinary authorities. Evolving from chef to chef-restaurateur bringing artistry to his restaurants and serving as a mentor to the regions talented cooks.
“This is what I do” he says. Driven to succeed and a self-proclaimed workaholic, Tony oversees kitchen operations, creates menus that reflect his clean and simple style, and hand selects his wine lists. Max has been honored with multiple “Awards for Excellence” from Wine Spectator Magazine.
Max Market, opened it’s doors in September, 2008. Simply put, Max Market is a food market for food people, focusing on the best of Max Restaurants signature ingredients and dishes.
It was with great delight that when asked to be the food service operator for The Memorial Art Gallery, Gullace accepted. Both the modern dining room, historic parlors and grand hall, act as perfect backdrops artistic menus and wonderful events.
In addition to being the chef-owner of the regions finest restaurants, Tony also takes time to give back to the community working closely with a diverse group of philanthropic organizations through Max Community.
